Milk Made From Nuts Or Seeds

Makes 3 Cups

  • 1 cup nuts (almonds, brazilian nuts, cashews, hazelnut, walnut, hemp seeds etc…)
  • 4 cups filtered water
  • 4 pitted dates
  • 1 pinch sea salt
  • 1 tsp vanilla extract or powder I also add a little cinnamon and cardamon
  1. Place all ingredients into a high speed blender I use a Vitamix and blend them till totally smooth.
  2. Lay a double layer of cheesecloth or a nut milk bag over the mouth of a large mason jar or another large container into which you can strain the liquid. You can also use small metal-mesh strainer if you don’t have a cheesecloth, but your milk will have more pieces of the pulp.
  3. Pour the nut milk through the cheesecloth or nut milk bag, and into the container. You may need to work in batches. You can compost or save the nut pulp, I like to use it in my chia pudding or make raw deserts. Transfer the nut milk to an airtight container. It will keep in the fridge for 2-3 days. Enjoy : )
