Olenko’s Raw Zucchini Lasagna

Slice the organic zucchini, layer organic baby spinach, tomato, Persian  cucumber and spread cashew cheese. To make cashew cheese, mix zucchini with cashews, sea salt, cayenne pepper, fresh garlic, arugula, lemon juice, blend all in the Vitamix, and you can add fresh herbs like parsley, basil or cilantro. Keep it n the fridge for 3 days. Cashew cheese is great with raw crackers, or in a salads  and any other raw appetizers. Finish lasagna with layer of cucumbers, organic sunflower macro-greens and raw Peruvian olive. Enjoy : )
