Olenko’s Happy Earth Day Sandwich

You will need this organic ingredients for the sandwich: 

  • organic lettuce
  • baby kale
  • persian cucumber
  • organic tomatoes
  • homemede raw flaxseed-seaweed cracker
  • homemade raw hummus
  • raw organic almonds
  • organic sweat pea shoots

To make the sandwich layer each ingredient starting with lettuce and decorate with edible or spring flowers. Enjoy : )

Flaxseed-Seaweed Crackers:

Soak flaxseed in pure water for 30 min, they need to get thick, then add pink Himalayan salt, cayenne pepper, cumin, dry dill and pumpkin seeds to make the mixture, it should be thick. Spread it over the large seaweed wraps on a teflon sheets. Put it in the dehydrator and dehydrate for 5-7h at 110 degrees, then flip it over and dehydrate for another 2h or until completely dry. Keep it in the glass container for a week or more.

Olenko’s Raw Hummus:

Wash organic chickpeas and soak them in pure water overnight. Wash them and put them in the sprouting jar, change the water twice a day. They should be ready in 1-2 days. When they are ready rinse them in pure water and put them in the Vitamix or other blender. Add water, mix all, add more water. Add a pinch of Kalahari salt or Himalayan Pink Salt, pinch of cayenne pepper, black pepper, raw garlic, Bragg nutritional yeast, fresh lemon juice and raw tahini. I also add Young Living Lime essential oil, it makes the hummus taste so fresh. This hummus is healthy and works great as an appetizer or in a salad. Keep it in the fridge for 3 days. Enjoy : )
