Lucuma is a subtropical fruit native to Peru. It has a unique flavor of maple and sweet potato, having high levels of carotene, vitamin B3 and other B vitamins. The lucuma flavor ice cream is very popular in Peru. This raw lucuma ice cream is so yummy that I cant stop eating it : ) great for kids as a healthy snack.
Raw Lucuma Ice Cream
½ cup Sundood Lucuma Powder
2-3 frozen ripe bananas
4-5 dates
vanilla powder
½ cup pure water
cherries
sweet pea
organic cacao nibs
Combine all ingredients and blend until smooth in a Vitamix or high speed blender. Pour into a glass, add cherries, cacao nibs and sweet pea and shoots. Enjoy : )
I also added on a top my easy to make raw carrot cookie made from the carrot pulp ( after making a carrot juice there is so much pulp), coconut shreds and coconut oil, chia seeds, sunflower seeds, flaxseed, water, cinnamon. Mix all. Add raw honey or maple syrup to your taste. Put overnight in the dehydrator on 110F or in the lover setting of your oven. Keep them in the fridge for a week.
