Olenko’s Raw Pina Colada Cake

On a raw food diet you can have your cake and it it too : )

Bottom layer

3 TBSP raw cacao beans, 1 TBSP maple syrup or agave, 4 ripe bananas. Cut 2 bananas into long pieces and put at the bottom of the cake dish. Two other bananas mix in with the other ingredients in the Vitamix or a high speed blender. Pure int to cake form.

Top layer
1 pineapple (cubed) , 1/2 cup of shredded coconut, 1 ripe banana, 2-3 dates, ½ raisins, berries to decorate the cake, l used organic blueberrys and strawberries. Mix the pineapple with dates in a Vitamix, you may have to add a drop of water. Pour the mixture into the cake mold ( the two layers will mix a little and that is ok), add the rest of the ingredients. Put the cake in the freezer to set for about 30 min. Take it out and decorate the cake with berries. Freeze it for 5-6 h and serve it ( keep the rest in the fridge)or keep in the freezer and take it out 2h before serving it. Serve with fresh berries and macro greens. So healthy and yummy. Enjoy!
* To make the cake you will need Vitamix or high speed blender. It”s very easy. Make sure bananas and pineapple are ripe so the cake will be sweet. If you want you can add honey, maple syrup to make it more sweet.
