Healthy Vegan Lunch- Olenko’s Rice Paper Rolls stuffed with veggies, greens, sprouted tofu and orange, with mango dressing on the side. Healthy, yummy and made in 5 minutes.

This vegan asian inspired spring rolls are so easy to make. You need to buy the clear rolls at the Asian supermarket or health food store. With wet paper towel wet your rice paper rolls, place on a plate and then fill them with whatever organic veggies, greens or fruits you like, you can add mushrooms, sweet pea shoots, fresh herbs like basil, mint, cilantro, seeds, etc… Roll them and enjoy. Dip it in your favorite dressing like mango-basil or pineapple- mint- Jack fruit made in a Vitamix or high speed blender. Possibilities are endless. Have a great Saturday everyone : )
