Olenko’s Black Bean Soup- half cooked and half raw

2 cups organic dry black beans

fresh cilantro

1 raw organic tomato- cubed

small organic onion- chopped

3 pieces of fresh organic garlic

1 cup organic baby arugula

2 TBS Bragg Raw Apple Cider Vinegar

Bragg nutritional yeast to your taste

1 TBS organic chia seed oil

pinch of cayenne pepper

pink Himalayan salt for your taste

cumin to your taste

pinch of curry powder

pinch of ginger powder

8 cups of pure water

Rinse the dry black beans and soak in pure water overnight. When ready to cook, rinse them again and cook in 4 cups of pure water for about 20-30 min. Let them cool off a bit. Then mix in the Vitamix or high speed blender about 80% of the beans with the water. Add the rest of ingredients. Serve in a bowl with some whole black beans and cilantro, sprinkle with fresh lemon juice. Very creamy, healthy and yummy : )
