Olenko’s Raw Carrot Cookies Recipe

I just made the raw carrot cookies but I didn’t measure anything, sorry. I always just make something without measuring, sorry next time I’ll try to remember to measure. So if you want to make the cookies just go with your own taste. They should be little sweet, dense but crunchy outside and soft inside. Like a carrot cake : )

Mix in organic carrot pulp from your carrot juice with organic coconut flower, cinnamon, cardamon powder, little sea salt, raw agave. In the other dish mixed chia seeds with water for 10 min, then add chia with water to the rest of the mix. Mix well with wooden spoon. Form cookies with hands, spread on the teflon sheets or parchment baking paper, dehydrate for 3h on 110F then flip and dehydrate again for 3-4h. You want the cookies to be crunchy outside but soft inside. So yummy with almond butter and fruits. Store in the fridge for 1o days and they freeze well too. Very healthy and yummy! Enjoy : )
