Olenko’s Red Quinoa Salad with Edible Flowers

  • 2 cups cooked quinoa
  • 2 TBS fresh beet juice
  • 1 TBS fresh lemon juice
  • 1 TBS chia seed oil
  • pinch of cumin
  • pinch of pink Himalayan salt

Mix all ingredients in a bowl. Serve the quinoa salad with raw carrots, beets, jicama and edible flowers on a bed of mix greens. Enjoy : )
