So healthy and yummy. Here is the recipe formy homemade Chickpea-Kale-Avocado Salad:
Chickpea-Kale-Avocado Salad:
- 2 cups organic dry chickpeas ( soaked overnight and cooked for 15min)
- 5-6 leaves of organic curly kale
- 1 cup organic baby tomatoes
- 2 organic avocados
- 1 small purple onion
- 1 organic lemon juiced
- 1 organic lime juiced
- 2 TBS raw coconut vinegar
- 2 TBS organic hemp seed oil
- ¼ tsp pink Himalayan salt
- pinch of cayenne pepper
- ½ tsp curry powder
- ½ tsp nutritional yeast
