Ingredients
- 2 Carrots
- 2 Oranges
- ½ TSP Cinnamon
- ½ cup Orange Juice
- 1 TBS Sugar
- ½ TSP Rose Water or Orange Blossom
Method
In a grader, rap the carrots very thin, add the OJ, cinnamon and sugar. Serve chilled.
WHITE BEANS TAGINE (SERVES 4)
Ingredients
- ¼ cup of Olive Oil
- ¼ Tsp Paprika
- ½ Chopped Onion
- ½ cup of Parsley
- 4 Chopped Tomatoes
- 2 cup of White Beans
- ¼ Tsp of Tomato paste (optional)
- Salt and pepper to taste
- ¼ lb of butternut squash cut in D
Method
Soak the white bean in water the night before (if not cook them in the water until soft). In a blender, make Tomato sauce with 2 tomatoes. In a Tagine Sautee the Onions in Olive oil then add the two chopped Tomatoes. Pour some of the tomato juice and add the white Beans, Spices, and the butternut squash Parsley, and Cilantro at the end when the butternut squash is cooked. Stir over from time to time and add the remaining juice when needed to create some gravy
