SPINACH SALAD

Ingredients

  • ¾ lb fresh Spinach, washed, dried, and chopped
  • ¼ lb Flat Parsley, roughly chopped
  • 3 TBS Olive Oil
  • 4 crushed Cloves Garlic
  • 1 TSP Paprika
  • 1 TSP Cumin
  • 1 Pinch Cayenne Pepper
  • 3 TBS Lemon Juice
  • 1 TBS chopped Preserved Lemon
  • 1 TBS chopped Green Olives
  • Salt to taste
Method

In a large fry pan, slowly cook the Garlic, Parsley and Cilantro in the Olive Oil and then add the chopped Spinach and Parsley.  Cook for a few minutes until the Spinach has collapsed, then add the Paprika, Cumin, Cayenne and Lemon Juice. Continue to cook for about 5 minuets then add the chopped Olives and Preserved Lemon.  Taste and add Salt if necessary. Served chilled.
