Ingredients
- ¾ lb fresh Spinach, washed, dried, and chopped
- ¼ lb Flat Parsley, roughly chopped
- 3 TBS Olive Oil
- 4 crushed Cloves Garlic
- 1 TSP Paprika
- 1 TSP Cumin
- 1 Pinch Cayenne Pepper
- 3 TBS Lemon Juice
- 1 TBS chopped Preserved Lemon
- 1 TBS chopped Green Olives
- Salt to taste
Method
In a large fry pan, slowly cook the Garlic, Parsley and Cilantro in the Olive Oil and then add the chopped Spinach and Parsley. Cook for a few minutes until the Spinach has collapsed, then add the Paprika, Cumin, Cayenne and Lemon Juice. Continue to cook for about 5 minuets then add the chopped Olives and Preserved Lemon. Taste and add Salt if necessary. Served chilled.
