St. Patrick’s Breakfast at Olenko’s Kitchen

So today I made raw vegan St.Patrick’s chia- shamrock pudding and rainbow of organic fruits. Very easy to make, healthy and yummy.

To make chia pudding you will need to make the almond milk first:
1 cup organic almonds (soaked overnight)
3 cups pure water
4 organic honey dates
Pinch of cinnamon
Pinch of ginger powder
Pinch of cardamon
1 TBS organic maple syrup

Mix all in the Vitamix or high speed blender. You can strain the milk in the milk bag and use the pulp for cookies or use the milk with the pulp in your chia pudding, it will be thick but so yummy.
In a large bowl mix 3 TBS of organic chia seeds with 1 cup pure water, let it sit for about 10-20min. Mix well, add your raw almond milk with or without the pulp. If you want you can add some oats and bee pollen. Serve with fresh of frozen fruits on the side that you arrange in the shape of the rainbow. I used organic bananas, strawberries, kiwi, orange and dry and frozen berries. On the top I used 4 pieces of fresh spinach to make a shamrock. Happy St. Patrick’s Day! Enjoy!!!
