Olenko’s Holiday Persimmon-Strawberry Dessert

3-4 ripe persimmons

½ cup organic strawberries

2 frozen ripe bananas



2-3 Medjool dates

White Cashes and Vanilla

2 cups organic cashews

dates 3-4

1 TBS organic maple syrup or coconut sugar

pure vanilla

ginger powder



In the Vitamix or high speed blender mix cashews with with pure water, the ratio should be 2 cups of cashews-1 cup of pure water. Add vanilla and spices, mix untill smooth and put the mixture in the fridge for about 30 min or longer. You can also make this the night before, the longer it sits the better it gets. When ready to serve the dessert mix all ingredients from the persimmon- strawberry section. Pour into the glasses and top it off with with white cashew and vanilla. Decorate with fresh strawberries and raw cacao beans. Enjoy and happy holidays!
