Olenko’s Rainbow Raw Vegan Cake

This cake is all raw, vegan, gluten free, sugar free, low fat, healthy and yummy : ) Perfect for a birthday party or a special celebration.

Crust – Orange Color

½ cup organic goji

1 cup raw buckwheat grouts

1 cup pure water

Mix all in the Vitamix or high speed blender. Pour the mixture in a cake form and place in a freezer for 30 min.

Yellow Color

3 cups of cubed organic pineapple

1 mango

½ cup pure water

Mix all in a Vitamix or high speed blender and pour over the orange color.

Place in the freezer for 30 min or until solid.

Green Color

4 cups organic spinach

3 organic kiwi

3 TBS of pure water

Mix all in a Vitamix or high speed blender and pour over the yellow color. Place in the freezer for 30 min or until solid.

Red Color

3 cups organic fresh cranberries

½ cup pure water

Mix all in the Vitamix and pour the mixture over the green color. Place in a freezer for 30 min or until frozen.

Lavender Color

1 cup organic cashew

2 ripe bananas

2 TBS organic Acai berry powder

1 cup pure water

Mix all in the Vitamix and pour the mixture over the red color. Place in the freezer until frozen about 2-3 h or overnight.

Decorate the cake with fresh fruits like blueberries, blackberries, cranberries, grapes, persimmon, mango, kiwi and greens like sweet pea shoots. I made rose flower with mango and I made kiwi flowers and used crannberries for the middle of flowers. I also used the purple and green cabbage to make leaves. At the end sprinkle the cake with coconut flakes and enjoy : )

* You can use other fruits or veggies to make the colors of the rainbow cake, just use whatever fruits or veggies you like.
