Olenko’s Raw Banana-Sweet Potato Crepes with Cashew-Acai Cheese and Goji Ice Cream

Crepes:

  • 5 large organic ripe bananas
  • 2 small organic sweet potatoes (cubed)
  • 1 cup of pure water
  • 1 tablespoon of cinnamon
  • fresh juice from 1 lime
  • 5 drops of Young Living lemon essential oil (optional )

If you want your crepes more sweet add a little of maple syrup or agave  to your taste. I like my food not to sweet, more fruity : )

Directions:

Mix all ingredients in the Vitamix or other high speed blender. Mix until smooth. Pour batter at time onto nonstick teflon sheets. I made 10 crepes from this recipe. Use a spatula to form smooth circles. Dry in the dehydrator for 5-6 hours on 110 F. Check them and when they are ready peel them carefully. Store them in the fridge and when you want to serve them you can warm them up in the dehydrator. Serve with any homemade raw ice-cream or cashew filling with fruits.

Cashew-Acai Cheese:

  • 1 ½ cup raw cashew nuts
  • ½ cup Organic Amazon Acai Powder from Sunfood
  • 5 dates
  • ½ pure water

Mix everything in the Vitamix and chill in the fridge. Serve with raw crepes, raw ice cream, fruits and greens. I used mango, melon, apricots  and sweet pea shoots. So good!

Raw Goji  Ice Cream:

  • 1 cup organic goji berries
  • 1 teaspoon Camu Camu powder
  • 1 cup pure water

To make raw ice cream, soaked the gojies in the pure water for 1 h, then just blend them with the water they were soaking in the Vtamix. Add camu camu powder. Freeze overnight in a glass container. Serve on the side of the crepes. So yummy! Also great to mix them with berries for any raw dessert. Enjoy!
