Olenko’s Raw Breakfast

Banana- butternut squash crepes with fresh fruits cinnamon-sweet potato raw ice cream and toped with spinach-mango. Life is good! What did you have for your breakfast today?

Crepes:

  • 5 large organic ripe bananas
  • 1 cup organic butternut squash (cubed)
  • 1 cup of pure water
  • 1 tablespoon of cinnamon
  • fresh juice from 1 lemon
  • 5 drops of Young Living lime essential oil (optional )

If you want your crepes more sweet add a little of maple syrup or agave  to your taste. I like my food not to sweet, more fruity : )

Directions:

Mix all ingredients in the Vitamix or other high speed blender. Mix until smooth. Pour batter at time onto nonstick teflon sheets. I made 10 crepes from this recipe. Use a spatula to form smooth circles. Dry in the dehydrator for 5-6 hours on 110 F. Check them and when they are ready peel them carefully. Store them in the fridge and when you want to serve them you can warm them up in the dehydrator. Serve with any homemade raw ice-cream or cashew filling with fruits. To make raw ice cream, just blend fruits, nuts with a tiny bit of homemade nut milk or pure water, add dates, figs to make it more sweet with spices like cardamon or cinnamon, pure in the glass container and freeze it for 5-6 h or overnight. So easy. Possibilities are endless : ) To make a spinach-mango dressing, mix mango and organic spinach in the Vitamix, pour over the crepes. So yummy. Enjoy!
